The easiest healthy fall snack you will ever make: Pumpkin Date Balls

Before you ask, aren’t you kinda late with this pumpkin recipe? The answer is yes. But I’m gonna share it anyway because it’s just so darn good and we are still in the season. Yes its Pumpkin season and you probably have a jar or two of Pumpkin puree sitting on top of your counter. Instead of making your regular degular pie. How about we scoop some of that puree into make some really moist delicious and healthy treats for the family.

No bake or baked energy balls are my favorite way to make sweet but healthy treats for the kids. We've gotten so good that my 5 year old can make em herself. All you need is 5 key ingredients to put these fiber and protein rich treats together. If your alergic to nuts you can even leave the nut butter out and add more dates. These balls are full of Pumpkin and sweet date flavors and go so well a Pumpkin spiced flavored coffee. They are perfect for kids and adults alike. Prep these bad boys and impress the family.

What you will need:


Pumpkin puree
Oats. I used old fashioned rolled oats. Cause I like the texture better. But quick oats will work just fine
Peanut butter or any nut butter.
Dates. Soften them in hot water for a few minutes.
Chia seeds



Optional chocolate chips because my daughter likes chocolate chips in everything
Coconut flakes because I happened to have them on hand and they add a nice little crunch.


INGREDIENTS:

  • 1/2 cup pumkin puree/canned pumkin

  • 1/2 cup oats

  • 1 cup dates

  • 1 TBSP nut butter

  • 2 tsp chia seeds

  • 1/4 cup chocolate chips

  • 1/2 cup coconut flakes


INSTRUCTION:

  1. Combine all the ingredients together minus the oats and coconut flakes in a bowl. This is a pre step for me. If you have a highpowered blender you can throw them in directly

  2. Blend all the ingriedients together.

  3. Add the oats in and blend.

  4. Roll into balls.

  5. Optopnal: roll your balls into coconut flakes. Enjoy!
