As you guys know I’m recommitted to, especially those following me on the gram, I’ve been eating all plant-based when I’m at home. For those interested to know I’m not a vegan. But I do eat plant-based at home and the majority of products I use are vegan, but when I go out to eat I don’t stress and eat whatever my heart’s desire. This is the balance that works for me right now currently. Do what works for you.

No bake or baked energy balls are my favorite way to make sweet but healthy treats for the kids. We've gotten so good that my 5 year old can make em herself. All you need is 5 key ingredients to put these fiber and protein rich treats together. If your alergic to nuts you can even leave the nut butter out and add more dates. These balls are full of Pumpkin and sweet date flavors and go so well a Pumpkin spiced flavored coffee. They are perfect for kids and adults alike. Prep these bad boys and impress the family.

One day my daughter asked for donuts so I made her some puff instead. They are a cross between donuts and muffins with a delicious cinnamon-sugar topping. I use gluten-free flour but feel free to use regular all-purpose flour.

The next was more for me but ended up being something my kids love too. Can’t have anything to myself lmao. Coffee cake, it’s got traditional coffee cake flavors with yummy brown sugar and it’s pretty easy to throw together. I like to make these muffin size but you can make it in a regular cake pan as well.

I took a long break after adding my beautiful daughter Faye to the Johnson clan. And let me tell you now that I have two kids I make it my mission to make easy, quick and healthy meals for our family.

Italian meals are my favorite and since going dairy-free (and making my own) this has been a struggle. But after some trial and error and Pinterest mix and matching. I’ve found a great ricotta type cheese sauce to layer into my mushroom lasagna.

Now yall know I have a love affair with breakfast and brunch. Egg, pancakes, French toast are some of my faves! But I recently found a cute mini waffle maker so I decided to whip up some waffles using ReMix waffles.

Growing up I was not a big fan of veggies but as I get older I became an advocate for fruits and veggies and try to find different ways to cook them and make them tasty. I have a yummy and nutritious butternut squash smoothie and easy peasy butternut squash soup for you guys.

Pasta is in my top 5 favorite meals. My husband is always excited when I make pasta because he loves the way I make it. I know what you're wondering what's so exciting about some noodles and some sauce lol. I always try to make mine easy but full of flavor. I've been trying more healthy plant-based/vegan meals lately so why not start with my favorite. So I'm doing a two-part pasta series on my blog. Delicious Aruban style fish and funchi Recipe

I grew up on the beautiful island of Aruba. And my grandmother, she passed away a few years ago, made the best fried fish recipe for dinner, especially during Lent. Its common to pair your fish with what we call Funchi (yellow cornmeal) in Aruba. She made her fish three ways; fried, salted and boiled. I don't know what took me so long but recently I attempted to make her fried fish recipe and it came out great.  The family really enjoyed it. The crispy fried fish paired with the soft Funchi accompanied by some fried plantains makes for a delicious Caribbean inspired dinner.

So my husband has been talking about his famous butter chicken that has been requested at work every week since he started making it. Being do the foodie that I am, and also a bit jealous that I had not tried it, I requested he makes it this weekend. Thinking what could be the big woop about some butter chicken. I stand corrected, this is one of the best chicken recipes.. First of the spices and ingredients used in this recipe, maybe few but pack a punch of flavor!
