3 Plant-based superbowl eats inspired by west African flavors!


Hey Yall!

It's a week till the big game day! For those who may be unaware but the superbowl is coming up. I am a pretty big football fan, go pack go! I started watching football in 2010 during my college years at the University of Central Florida. Eventhough my team fell out if the running I'm still tuning into the superbowl like I do every year. Even if your not a sports fan like me you may be tuning in for the music, entertainment or legendary footbal commercials.. Half time shows tend to be a big deal.

Every year we gather round with friends and family, cook food or order out the usual wings, nachos, burgers etc from our local pubs and dives.

This year I wanted to do something different. As inspiration I'm using the amazing soups and sauces from Egunsi food. A line of bold tasting soups inspired by West african flavors. If your hosting a big superbowl party (safely ofcourse) or even a small gathering and want to wow your guest with some west African inspired eats check out these classic recipes with a bold spicy twist.

Jollof cauliflower wings.

INGREDIENTS:

  • 2 heads of cauliflower cut into florets

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 Tbsp Curry powder

  • 4 Tbsp Ata Din Din Sauce . (red pepper chutney)

  • 1/2 medium diced onion

  • 2 tsp tomato paste

  • 2 Tbsp Honey

  • 4 cloves of minced garlic

  • 4 Tbsp oil



INSTRUCTION:

  1. Combine all ingriedients in a bowl and toss the cauliflower florets

  2. Cover and let marinate overnight.

  3. roast in airfryer for 10 minutes on 350 (You can use your oven if you dont have an air fryer, bake for 15 minutes on 375)

  4. Toss in extra Ata Din Din sauce and enjoy!



Spicy Flatbread pizza

INGREDIENTS:

  • Your favorite flatbread. I used garlic Naan bread

  • 4 Tbsp Obe Ata soup (tomato soup)

  • 3 cloves garlic minced

  • 1 Tbp oil

  • Fresh Mozzarella

  • Fresh Spinach

  • basil (optional)



INSTRUCTION:

  1. Pre-heat oven to 375.

  2. Brush flatbread with mixture of oil and garlic

  3. Add the Obe Ata soup, then cheese and spinash

  4. sprinlkle with basil

  5. Bake for 15 minutes. (I like mine crispy. Bake for 10 minutes for less of a crisp)

  6. Enjoy!
