Butternut Squash Two Ways

Hey squad,

Switching over to a healthier lifestyle should be fun and full of experimentation. Which I encourage in my healthy lifestyle group. If you like cooking; try and discover interesting, yummy and new ways to cook things that are good for you like vegetables. Growing up I was not a big fan of veggies but as I get older I became an advocate for fruits and veggies and try to find different ways to cook them and make them tasty. I have a yummy and nutritious butternut squash smoothie and easy peasy butternut squash soup for you guys.

 

Lets start with the Smoothie. It's like getting a piece of fall during the Summer. It tastes sweet, hearty and refreshing. A perfect meal or snack on a hot summer day.

Butternut Squash

 

Ingredients:

 

3/4 cup Butternut squash fresh or frozen, cubed and cooked (roasted or steamed) and let it cool

3/4 cup Almond milk

1/4 cup Walnuts

1 Tsp Cinnamon

1 Tsp Turmeric

2 Tsp Maple Syrup

1/4 cup Ice

Add Vanilla Protein Powder to make it a meal!

 

Blend together and enjoy!

 

Now if your looking for something warm on a cool day, this soup is perfect and simple to make.

Butternut Squash

 

Butternut squash fresh or frozen (thawed) and cubed.

1/2 cup onion

1 tsp curry powder

3 cups vegetable broth

2 TBSP coconut oil

2 cups water

1 can of coconut milk

A few sprinkles of thyme

Salt and pepper to taste

 

Heat 2 TBSP of coconut oil then add the onion and curry powder. Cook until tender.

Add the butternut squash, the water, and the vegetable broth. Cover and simmer until squash Is soft and tender.

Remove from her and add content into a blender. A little bit at a time, blend until smooth.

Put back on the heat, simmer for 3 minutes while adding thyme, salt, and pepper.

Remove from heat and add coconut, stir and enjoy!
