Easy plant-based recipes, What I eat in a day

As you guys know I’m recommitted to, especially those following me on the gram, I’ve been eating all plant-based when I’m at home. For those interested to know I’m not a vegan. But I do eat plant-based at home and the majority of products I use are vegan, but when I go out to eat I don’t stress and eat whatever my heart’s desire. This is the balance that works for me right now currently. Do what works for you.

Most of you, my Insta fam let me know you wanted to see a blog post on what I eat in a day, plant-based edition. I’m going to make this super simple. No fancy stuff you have to buy. I usually focus on eating whole foods, fruits, vegetables, grains, and legumes.

3 Plant-based superbowl eats inspired by west African flavors!

Every year we gather round with friends and family, cook food or order out the usual wings, nachos, burgers etc from our local pubs and dives.

This year I wanted to do something different. As inspiration I'm using the amazing soups and sauces from Egunsi food. A line of bold tasting soups inspired by West african flavors. 6 step plant-based cinnamon sugar desserts

One day my daughter asked for donuts so I made her some puff instead. They are a cross between donuts and muffins with a delicious cinnamon-sugar topping. I use gluten-free flour but feel free to use regular all-purpose flour.

The next was more for me but ended up being something my kids love too. Can’t have anything to myself lmao. Coffee cake, it’s got traditional coffee cake flavors with yummy brown sugar and it’s pretty easy to throw together. I like to make these muffin size but you can make it in a regular cake pan as well.

I took a long break after adding my beautiful daughter Faye to the Johnson clan. And let me tell you now that I have two kids I make it my mission to make easy, quick and healthy meals for our family.

Italian meals are my favorite and since going dairy-free (and making my own) this has been a struggle. But after some trial and error and Pinterest mix and matching. I’ve found a great ricotta type cheese sauce to layer into my mushroom lasagna.

Chocolate chip Banana Waffles

Now yall know I have a love affair with breakfast and brunch. Egg, pancakes, French toast are some of my faves! But I recently found a cute mini waffle maker so I decided to whip up some waffles using ReMix waffles.
